SUNDAY DESSERT #80: Feng Li Su (Pineapple Cake)

DIFFICULTY LEVEL: Intermediate
INSPIRATION: Besides Pineapple Upside-Down Cake, I really had no idea of any other pineapple desserts. Then I saw this and had to try it!
RECEPTION/COMMENTARY: Although this dessert has its roots from China, it has become more well known as a signature dessert in Taiwan. People give these little cakes to their friends and family to wish them good fortune.
So we're talking sweet pineapple jam filling encased in a butter and shortening pastry. Then it gets baked in a rectangular mold. Sounds simple and tasty, right? Though I'm not exactly sure why it's called a cake because the texture of the dough is more like a pie crust.
And it's flaky, buttery, fruity, and sweet; a perfect ratio between dry and moist. If you could somehow make a miniature pineapple tart, that is exactly how I would describe this dessert. It's insanely good! Watch out though. It's hard to stop eating these bite-sized wonders! Perfect 10/10!
WOULD I MAKE IT AGAIN? Oh indeed! And though it wouldn't be traditionally Taiwanese, testing other fruit fillings would be fun.
