SUNDAY DESSERT #74: Fudge-Caramel Truffle

DIFFICULTY LEVEL: Easy


INSPIRATION: Flag Day is coming up this week. Since I've always wanted to try making a truffle, I thought it would be a good excuse to make some drizzled with red, white, and blue to honor both the American flag and the French dessert.


RECEPTION/COMMENTARY: The truffle was an accidental invention in the 1920s. An assistant to a famous French chef was in charge of making a pastry cream filling. However, he accidentally poured the hot cream into a bowl of chocolate instead of a bowl of whipped eggs (not sure how you make that mistake, but I like the story anyway). The head chef was furious with his assistant but then noticed that the emulsion of cream and chocolate hardened slightly so that he could roll it into a ball. He then tossed it in some cocoa powder to prevent sticking and voilà! The truffle was born! He so named it because it resembled the black truffle mushroom (a culinary delicacy) with bits of soil still stuck on it. Clever! I think his assistant should have gotten a formal apology and a significant raise in salary and position...


There are many adaptations of the classic, cocoa-powdered truffle. I made mine with fudge-caramel filling and coated it in a dark chocolate shell with a white chocolate drizzle. Nuts, sprinkles, and sea salt are other popular toppings to this classy dessert.


Truffles are SO good and this one was as well! And I might just be arrogant enough to say that I actually thought mine were just as tasty as the ones you get from Lindt! I gave it an 8/10 though only because it was exceptionally rich.


WOULD I MAKE IT AGAIN? I love truffles! Especially caramel ones. But making them is such a messy and time-consuming process. I'd rather just buy a bag of them from the store (since it tastes pretty much the same), couple it with some popcorn, skip out on the clean up, and watch a movie instead.
