SUNDAY DESSERT #49: Kransekake


COUNTRY OF ORIGIN: Norway 🇳🇴


DIFFICULTY LEVEL: Intermediate


INSPIRATION: It started when we were watching the Disney short film, "Olaf's Frozen Adventure." There's a part when our dear, beloved snowman, Olaf, pops out of a giant cake in the Arendelle dining hall. Well, it caught my interest and whatdya know? It really is a traditional celebration cake in Norway!


RECEPTION/COMMENTARY: Kransekake (crawn-seh-kah-keh) literally translates to 'wreath cake.' It is also sometimes called Norwegian wedding cake. You do need special cake pans to make this and the dough needs to be rolled out to the exact same width for even layers. That's pretty much why it is an intermediate recipe, but still totally doable. AND, the main ingredient is almond flour. Almond flour! If that wasn't already appealing, let me just amplify it by saying that there is almond extract in it as well. The dough tastes like straight-up marzipan! Did you just get the chills? Mmm. Love a good almond dessert. 😋


Unlike the name implies, this isn't so much a cake but more of an almond, biscotti-type cookie. It's crunchy, but also chewy. The royal frosting that holds the layers together adds a touch of sweetness that compliments the cookie well. Overall, we gave it a 7/10 on taste.


WOULD I MAKE IT AGAIN? In the words of Elsa, I might just have to "let it go". Although it was tasty and not too hard to make, there are many other holiday treats I'd rather take the time and effort to make and enjoy. But it's definitely worth it to make for an impressive party centerpiece!
