SUNDAY DESSERT #57: Linzer Cookies

INSPIRATION: Valentine cookies!
RECEPTION/COMMENTARY: Linzer Cookies originate from Linz, Austria and are an adaptation from the Linzer Torte (which is a pie with latticed almond crust and berry filling). The idea of the Linzer Torte was made simple by taking a fruit preserve and sandwiching it between two almond cookies with a sprinkling of powdered sugar. Uh...yum! Good work, Austria!
Traditionally these are made at Christmastime, but they can obviously be enjoyed all year round. These cute little tea-time cookies are perfect for any holiday or special occasion. You can cut out any shape and fill them with any preserves you desire. I filled mine with raspberry jam to match the Valentine spirit. They're buttery and soft but not too sweet. The hint of jam adds a dimension of tartness that rounds out the almond flavoring nicely. We rated them a 7/10! Happy Valentine’s everyone! ❤️
WOULD I MAKE IT AGAIN? Oh yes. And I'd like to try apricot preserves with a star cutout. So cute!
