Mille-Feuille

Updated: Mar 11, 2023

SUNDAY DESSERT #35: Mille-Feuille (pronounced meel-foy)

COUNTRY OF ORIGIN: France 🇫🇷

DIFFICULTY LEVEL: Intermediate

INSPIRATION: I've had Mille-Feuille (and it's cousin pastry, Napoleon) before in bakeries and I love them! It was time to attempt my own. Also, I was kinda torn between doing an American dessert for 9/11 and a British one for Queen Elizabeth. Picking a French one seemed kinda neutral between the two....hopefully that's not offensive. 😬😅

RECEPTION/COMMENTARY: Mille-Feuille literally translates to "thousand sheets" and it's title is appropriate. Flaky layers of buttery puff pastry sandwich vanilla pastry cream. And if that wasn't enough to get your mouth watering, adding a thin layer of royal icing for sweetness and aesthetic will. It's beautiful and classy! And taste? I gave it a 9 because my pastry cream was slightly runny and kinda oozed a little from between the layers. So in terms of texture, it wasn't exactly like a bakery. Not a big deal. It was still delicious! But if I just cooked the cream a minute or two longer it would have been stiff enough to make a substantial layer worthy of a true bakery pastry and, by extension, a 10/10.

WOULD I MAKE IT AGAIN? With stiffer cream? Heck ya!
