DIFFICULTY LEVEL: Easy


INSPIRATION: January 6th was Scotland's National Shortbread Day. January 8th is close enough, right?


RECEPTION/COMMENTARY: Shortbread is obviously Scottish. But the Millionaire's Shortbread recipe was first mentioned in an Australian women's magazine back in the 1970s. So, Scottish? Aussie? Both? Either way, it's incredible. Actually, downright luxurious! I completely understand where the name comes from.


Caramel. I just have to tangent about caramel for a minute. If you offered me anything and used that magic word to describe it, I'm going to say yes to it. I think I could even consider eating insects if they were covered in caramel. It's the good stuff! Anyway, back to shortbread. Reminiscent of a high-quality Twix bar, the aforementioned divine caramel is sandwiched between a thick shortbread crust and a decadent chocolate ganache. Oh, it's heavenly! But VERY sweet. I can only eat a tiny bar size. And I even sprinkled sea salt on top of the ganache to cut the sweetness. Because of its saccharinity, I gave it an 8/10. But, dude. It's all about the CARAMEL! šŸ˜šŸ˜‹ By the way, Billionaire's Shortbread is made with sea salt caramel and Trillionaire's is made with hazelnut praline caramel. Just in case you were curious...


WOULD I MAKE IT AGAIN? Yes. But I would only make it for a party because there is no way our little family could consume a whole casserole dish of this stuff.
