SUNDAY DESSERT #43: Nanaimo Bars

DIFFICULTY LEVEL: Easy


INSPIRATION: Colder weather = watching hockey = thoughts of Canada = craving a Canadian snack to eat while watching hockey. The inevitability of my life, Mr. Anderson, is that it eventually comes full circle back to dessert.


RECEPTION/COMMENTARY: Nanaimo bars, named after the city of Nanaimo in British Columbia, are a triple-layered delight. The base is a no bake chocolate-coconut-graham cracker-pecan cookie. This is then layered by thick, creamy, custard buttercream with a chocolate ganache topper. Are you drooling yet? The recipe is simple and most ingredients can be found right in your pantry. The only uncommon ingredient is custard powder. I have never heard of such a thing until I made this dessert. It's big in the UK though and, apparently, Canada. This stuff is awesome for two reasons. 1. It adds a custardy flavor to your buttercream that is delicious! 2. It helps thicken up the custard layer to a whole new level that you just can't imitate with egg yolks alone.


And taste? This is THE ultimate no bake cookie. It's incredible! We gave it an 8/10 rating because although it is scrumptious, it is also extremely rich. I ate one bar and felt completely satisfied but not sick. Any more though and it would have been too much. I recommend having a glass of water handy after you scarf this baby down.

WOULD I MAKE IT AGAIN? That Nanaimo bar was good, eh? Oh yeah, no, for sure.
