SUNDAY DESSERT #62: Pirozhnoye Kartoshka


COUNTRY OF ORIGIN: Russia 🇷🇺


DIFFICULTY LEVEL: Easy-Intermediate


INSPIRATION: We are having guests over for dinner tonight and one of those guests spent some time living in Russia. I'm selfishly hoping the dessert will spark some conversation towards his time spent there. 😉😅


RECEPTION/COMMENTARY: Pirozhnoye means "cake or pastry" and Kartoshka means "potato". This dessert is therefore translated as Potato Cake. Often, it is simply called Kartoshka. Despite its name, there are no actual potatoes in the recipe and is purely dubbed for mimicking the form of a turd. Ahem...excuse me...I meant potato.


Historically, Russian bakers would take stale, unsold pastries or bread and reused them by crumbling them up to make Kartoshka. Today, this chocolate truffle is made by crumbling up toasted nuts with either leftover cake, cookies, or sweet crackers. Sweetened condensed milk and butter act as the glue that holds the crumb together.


Choosing leftover cookies or crackers as a crumb base definitely makes this recipe easy as a no-bake option. However, more authentic Kartoshka is made using a vanilla sponge cake as the crumb base (which is what I chose to do). Cake-making is a slightly more difficult skillset which is why I consider this recipe to be possibly intermediate. But you can totally "cheat" and use a box mix or buy a pre-made, unfrosted cake to save time.


So despite looking like literal crap, these are the most decadent chocolate truffles I've ever had! They put cake pops to shame! I gave them a two thumbs up rating and a 9/10. If I weren't so immature, I'd probably give them a 10. But I just don't see a potato...it's partially about presentation, ya know? 💩


(By the way, trying to take a good picture of this was absolutely impossible. Whatever I did, it just looked like I was decorating poop. This was as good as it was gonna get.) 😂


WOULD I MAKE IT AGAIN? Yes, and definitely in a different shape with a drizzling of white chocolate to make it look more appetizing.
